Guard: Potential 7 to 10 years
Terroir: North facing, altitude 350 m. Old vines at the top of the estate, 70 years old, on Cretaceous and Miocene limestone.
Culture: Organic conversion started at the end of 2018; organic fertilizers; active promotion of biodiversity, enrichment of the microbiome.
Harvest: Manual, early October; low yield of around 21hl/ha.
Winemaking: 95% Grenache and 5% Syrah. 3-week maceration in whole bunches, then aging for 15 months for the Grenache (80% in demi-muids and 20% in vats) and the Syrah in 50 hl wooden truncated cone vats. Then blending of the duo for 8 months of final aging in concrete vats. Sulfiting below biodynamic standards. ALC 14.5%.
Tasting: Color: deep ruby. Nose: morello cherry, strawberry, garrigue, pepper. Palate: same notes, beautiful tannic structure. Subtle and elegant wine
Agreements: Stewed meats, spicy dishes, salty-sweet.
